DHA and your brain:
Docosahexaenoic acid (DHA) is an omega-3 long chain polyunsaturated fatty acid and one of the crucial building blocks of human brain tissue. Early in life, DHA is supplied via the placenta and from breast milk. Adequate DHA is particularly important for pregnant and nursing women. Studies have shown improved intelligence scores of breast fed children whose mothers took DHA supplements during pregnancy and nursing.1 The DHA levels in the breast milk from women in the United States are among the lowest in the world. DHA deficiencies starting in childhood can contribute to multiple problems later in life, such as hyperactivity and allergies. In fact, dyslexia and ADHD have been linked to the low DHA intake common in the United States.2 An adequate level of DHA has been found to improve behavior and symptoms of ADHD.3,4

Deficiencies of DHA may increase vulnerability to depression and may be responsible for most post partum depression after the baby's needs extract DHA from the mother's stores. DHA supplementation is indicated in anyone with a history of depression.

Alzheimer's sufferers have also been found to have lower DHA levels than healthy adults of the same age. Maintaining adequate DHA stores throughout life, as well as eating a diet rich in natural plant foods, is necessary for preventing the late life occurrence of these mental deficits associated with aging.

DHA and heart disease
Algae derived DHA was found in recent studies to increase the HDL/LDL ratio and decrease the total cholesterol/HDL ratio as well as lower triglycerides.5 DHA also increases the elasticity of the blood vessels and reduces total vascular resistance resulting in a lower pulse pressure that has significant effects at lessening the occurrence of cardiovascular events, such as heart attacks and strokes.6 It also has an anti-arrhythmic effect reducing the overall rate of fatal heart attacks.7

DHA in vegetarians
The typical modern diet is low in DHA for both omnivores and vegetarians alike. Most people eat a diet rich in Omega-6 fats, but deficient in Omega-3. Vegetarian and those who limit their intake of fish, wild meat, and eggs have especially been noted to have low levels of DHA. Many vegetarians who consume sufficient flax, hemp, walnuts and greens as a source of short chain Omega-3 fat may manufacture sufficient DHA fat on their own, but even with an ideal diet, lots of those on vegan diets are still found to be too low in this extremely beneficial compound.8

Dr. Fuhrman has often tested these levels in his patients and observed how frequently deficiencies of these fatty acids exist. Lower levels of DHA are the reason populations eating some fish are found to have improved cardiac blood parameters when compared to vegetarians, and it is the most common reason why some vegetarians may develop dry skin or other signs of imperfect health.9

Liquid D3™ comprises lanolin-derived cholecalciferol provided in a convenient concentrated liquid base of sunflower oil and purified water. The importance of light – beyond vision– has been known in all cultures for all time. The scientific research effort, however, is recent. It was inspired by findings that light exposure directly affects hormone levels and can reset the body clock either forward or backward. Expert professional consensus recommends using diffuse white light that blocks out ultraviolet radiation (in contrast to the “sun lamps” used for tanning, which are dangerous both to skin and eyes).

Scientists think that light therapy works at several different levels, producing a combined beneficial effect. It is directly energizing for most people, thus combating mood–associated fatigue. When used at an appropriate morning hour (or in rare cases, evening hour), it corrects the misalignment of the internal body clock with external night and day. Finally, it stimulates the brain’s production of neurochemicals that are thought to be antidepressant (and in that sense, it mimics drug effects in a more natural way, without the need for drugs).

You may prefer the two–light setting for less intensity in small spaces.
Although researchers don’t have firm numbers, lots of people are light deprived. Symptoms of light deprivation include:
Feeling depressed or moody during the fall and winter.
Fatigue, lack of energy, and difficulty getting up in the morning.
Problems getting things done (lack of motivation).
Reduced social contact (often reduced sexual interest).
Cravings for carbohydrate and weight gain.
Treatment regimens should be individualized and always with doctor’s supervision in cases of full–blown clinical depression. Light therapy involves daily, scheduled exposure to intense levels of artificial light in order to regulate seasonal mood swings, improve sleeping patterns, and produce a general sense of well–being.
According to medical researchers, the fluorescent light box is the preferred device for light therapy, with a recommended starting dose of 10,000 lux for 30 minutes per day. (Lux is the unit of measuring the illumination intensity of light.) The required parameters for 10,000 lux light therapy have been thoroughly clinically tested at major university centers, and have been established as the international standard for treatment of winter depression, milder “winter doldrums,” and other chronobiological, circadian rhythm sleep and mood disturbances.

The general regimen consists of 30–minute early–morning exposure sessions, during which the user sits at a distance of 12 inches (30.5 cm) from the screen, and concentrates on the tabletop work surface – for reading, writing, laptop, breakfast, and so on. Many people find it convenient to get their light therapy session during breakfast, before leaving the house. However, the optimum timing and duration of the light therapy session for individuals differs between people, and therefore you will need to explore a bit to find what works best for you.

The light level can also be switched down when the user wants longer exposures during the day. The flexible angular tilt allows the fixture to be used as an exceptionally powerful task or reading lamp, or for pleasant ambient lighting at a distance. One of the unique features is the screen–height adjuster, allowing optimum positioning according to the user’s height relative to the height of the table and chair. The unit features a smoothly diffused polycarbonate screen that maximally filters out ultraviolet (UV) radiation – an important safety precaution. Spectral emission properties have been independently verified by laboratory calibrations at Columbia University.

When used correctly, the Therapeutic light is an efficient way to help alleviate the fatigue, blues and other symptoms you may experience during the shorter days of the year. You should use the three-light setting 10,000 lux intensity. (The one–light setting delivers 5,000 lux.) Begin with 30 minutes at 10,000 lux in the early morning.

Remember: as long as you use a light therapy device designed according to the specifications recommended by light therapy experts, there is little risk of adverse side effects, and you can safely modify and monitor your progress.

The Center for Environmental Therapeutics (CET) has set standards for light box design that consumers, doctors and insurance companies should keep in mind. This light was designed with these standards in mind.

CET Standards for Light Box Design
Only light boxes should be used for bright light therapy. Visors have not yet been shown effective in placebo-controlled studies.
The light box should provide 10,000 lux of illumination at a comfortable sitting distance (with the eyes 12 inches or more from the center of the screen).
The lamps should give off white light rather than colored light. (Extended exposure to blue light may be harmful to the eyes, and red light is not effective for light therapy.)
Fluorescent lamps should have a filter that blocks ultraviolet (UV) rays. UV rays are harmful to the eyes and skin.
The light source should be covered with a smooth diffusing screen that evens the delivery of light. Bare bulbs and sharp points of light (including LED displays) can produce intolerable glare, forcing your gaze out of the therapeutic field.
Color temperature of lamps should be in the 3000–5000 Kelvin range for comfortable usage.
Light boxes should be equipped with high-efficiency ballasts that operate at 20,000 cycles per second in order to avoid flicker that can cause headaches. (Inferior magnetic ballasts operate at only 60 cycles per second.)
The light should be projected downward toward the eyes at an angle to minimize aversive visual glare.
The screen area should be at least 190 square inches (for example 12 inches high by 16 inches long) to provide a satisfactory field of illumination. (When using a compact light box, even small head movements will take the eyes out of the therapeutic range of light.)

Végétarisme, Végétalisme
Pour consommer de la viande, du poisson, des œufs, des produits laitiers, il faut faire naître des animaux, sélectionner ceux qui seront utiles, éliminer les autres, les enfermer, les mutiler, les engraisser, les capturer, les transporter, les tuer et les couper en morceaux.


Nous, consommateurs, nous pouvons refuser les produits animaux, refuser la viande.

Le végétarisme est un régime alimentaire qui exclut la chair des animaux (y compris celle des poissons).
Le végétalisme (ou veganisme) exclut tout produit d'origine animale (oeuf et lait).


La position de l’Association américaine de diététique et des Diététiciens du Canada (ADA) est que les régimes végétariens (y compris le végétalisme) menés de façon appropriée sont bons pour la santé, adéquats sur le plan nutritionnel et bénéfiques pour la prévention et le traitement de certaines maladies.

Because cows like number 879 can't fight back.
Cow number 879 lived—and died—in the dairy industry. During a PETA undercover investigation, she was found dead in inches of muck, urine, and fecal matter, and her body was covered with waste. She is believed to have been shot and killed.
Despite the overwhelmingly sad video footage of the dairy factory farm where cow number 879 died and photographic evidence of lame, thin, and downed cows left to suffer and die at the facility—not to mention expert testimony that all this constituted cruelty—a judge whose courtroom was packed with dairy farmers dismissed all charges against the factory farm's owners.

Because cows cannot rely on the law to protect them, it's up to every concerned person to take a stand and to vote against cruelty with your shopping cart. By going vegan, you're standing up and saying that this is not OK. You're also helping to prevent this from happening to any other animals.

Bébé végétalien ?

L'allaitement maternel des bébés jusqu'à 6 mois environ fait partie des recommandations usuelles et, d'ailleurs, jusqu'à cet âge, aucune autre nourriture n'est réellement nécessaire. Mais, après, bébé peut-il être végétarien ou strictement végétalien ? L'expérience prouve simplement que oui, à condition de penser son alimentation de façon appropriée.

Si le végétarisme bien planifié des bébés est généralement accepté par le corps médical, et considéré comme ne posant pas de problèmes majeurs, il n'en va pas de même du végétalisme, décrit comme trop compliqué à mettre en oeuvre. Cette fiche vise donc à informer les parents végétaLiens, les plus susceptibles de se poser des questions ou d'avoir des craintes. C'est eux, en effet, qui ont le plus besoin de conseils, s'ils veulent un bébé végétalien.

Pour les mamans voulant arrêter l'allaitement, la meilleure recommandation est de le faire graduellement. Par exemple, passer d'un allaitement exclusif à 5 mois à un lait maternisé seul à 7 mois, en augmentant petit à petit la fréquence des biberons (consulter un pédiatre pour adapter à l'enfant le rythme de la transition). Les laits de soja maternisés (2e âge, pour les enfants à partir de 5 mois) sont maintenant d'usage courant et peuvent être donnés jusqu'à 1 an, en complément de la diversification alimentaire. Ils apportent les nutriments nécessaires.

Une erreur à ne pas commettre est d'utiliser un simple « lait » végétal du commerce (ou même fait à la maison) : amande, noisette, soja, sésame, etc. Ces laits ne sont pas adaptés aux nourrissons et si une fabrication domestique reste théoriquement possible, elle nécessite une planification rigoureuse et un suivi médical. Les cas de bébés végétaliens dénutris que l'on rencontre dans la littérature médicale proviennent de familles ou de communautés ayant soumis leurs enfants à des régimes déséquilibrés, en essayant de fabriquer eux-mêmes des laits végétaux en remplacement du lait maternel. En réalité, ce n'est pas là le végétalisme qui est en cause, mais le sectarisme philosophique ou religieux des parents. Les résultats peuvent être catastrophiques.

Le tableau suivant propose des exemples de ce que l'on peut donner à un bébé en cours de sevrage, en incluant bien sûr le lait maternisé. La planification précise et l'évolution des quantités sont à discuter avec un pédiatre.

Exemple d'alimentation planifiée pour un bébé de 6 mois à 1 an (portion à donner chaque jour en 3 repas)
Aliments Portions
Pain complet (sous forme de biscottes ou équivalents): à pulvériser et imbiber d'un lait végétal. 1 tranche et demie
Céréales (bien cuites et réduites en bouillie): boulgour, blé, riz, millet, orge, flocon d'avoine, de blé, de maïs, pâtes, muesli. 1-3 c.à.s.
Fruits (réduits en purée; autres que des agrumes): avocat, pomme, pêche, banane, poire, abricot, raisin, baies diverses (vers 1 an). Fruits séchés réduits en purée: pêches, abicots, raisin et figues. 6-18 c.à.s.
Aliments protidiques (cuits et tamisés): noix et beurre de noix (amande, cajou, pignon, noix, pécan, pistache), beurre de cacahuète, légumineuses (soja, cacahuètes, haricots variés, pois cassés), lentilles, graines (citrouille, sésame, tournesol), miso, tofu. 2-12 c.à.s.
Légumes jaunes et verts (cuits et réduits en purée): carotte, poivron vert, brocoli, épinard, chou frisé 2 c.à.s.
Autres légumes (cuits et réduits en purée): graines germées (haricots mungo, soja, alfalfa), pommes de terre et patates douces, tomate (vers 1 an), laitue, chou, maïs, céleri, haricots verts, oignons, concombres, blettes, choux fleurs. 4 c.à.s.
Lait de soja maternisé 750 ml

Remarques générales (pour un bébé de 6 mois à 1 an) :
Dans toute la mesure du possible, utiliser des aliments issus de l'agriculture biologique, des produits frais, et préparer les repas soi-même.

• On peut introduire des jus de fruits vers 3 mois (mais en toutes petites quantités : quelques gouttes au début). Les faire soi-même, en commençant par du melon, bien mixé puis tamisé. Varier petit à petit les fruits. Les quantités peuvent être augmentées jusqu'à atteindre 100 ml vers 6 mois (cela n'a rien d'obligatoire ; il ne faut pas diminuer l'appétit du bébé pour le lait maternel). En cas de ramollissement des selles, diluer avec de l'eau ou arrêter.

• Les premiers aliments « solides » à donner au sevrage seront des compotes de fruits (frais ou séchés, mais dans ce cas après trempage : mixer les fruits séchés dans leur eau de trempage). On commence souvent par les bananes et les pommes. Les fruits acides tels que les agrumes, les baies (et les tomates) sont à éviter avant la fin de la première année.

• Des jus de légumes (carottes, céleri, laitue, par exemple) peuvent être administrés vers 7 mois, en même temps que les purées de légumes variés. Il est souvent préférable d'attendre quelque temps (vers la fin de la 1re année) avant d'introduire les légumes de la famille du chou.

• Les céréales et les légumineuses doivent être cuites longuement et lentement. Pour les céréales, quelle qu'en soit la forme (bouillies, farines, etc.), ne pas en donner avant 6 mois. Pour les légumineuses, attendre plutôt 9 mois (cela est aussi valable pour le tofu).

• Les aliments énergétiques sont importants ; les avocats peuvent être mélangés aux purées de légumes dès le début. Les beurres de noix et de graines sont à réserver vers la fin de la première année. Leur consistance assez lourde sera allégée par les purées de légumes. Ils apportent sous un faible volume des graisses essentielles, des protéines, des calories.

• Les graines germées sont à utiliser comme les légumes.

• Veiller à ne pas épicer les aliments : poivre, vinaigre, moutarde, ketchup, etc., sont à exclure. Il faut aussi limiter l'usage du sel (le lait maternel est pauvre en sel). Les condiments à base de soja (miso, shoyu) sont à utiliser avec modération.
Il n'y a pas besoin d'ajouter d'huile dans les préparations avant l'âge de 1 an. Il est également inutile d'ajouter du sucre.



Supplémenter ?
Normalement, il n'y a pas besoin de supplémenter, dans la mesure où l'enfant continue à consommer un lait maternisé équilibré et conçu pour son âge.
Par exemple :

• Acides gras poly-insaturés : A partir de 4 à 5 mois, on considère que le nourrisson a des capacités de synthèse suffisantes, et qu'il suffit de lui apporter, par son alimentation, les acides linoléique et alpha-linolénique au même niveau que chez l'adulte.

• Vitamine D : Un lait de soja 2e âge classique contient 1,1 µg (micro-gramme) de vitamine D pour 100 ml reconstitués. Compte tenu d'un apport de 750 ml, cela conduit à 8,25 µg/jour. La supplémentation dépendra des apports conseillés dont on tiendra compte (5 µg/jour aux Etats-Unis, et 20 à 25 en France!).

• Vitamine B12 : L'apport recommandé jusqu'à 1 an est de 0,5 µg/jour, ce qui est largement apporté par le lait maternisé (0,2 µg pour 100 ml : valeur usuelle). Le problème se situe en réalité en amont, lors de la période d'allaitement exclusif, si la mère, elle-même végétalienne, s'est trouvée carencée sans le savoir.

• Zinc : Il est reconnu que l'enfant nourri au sein pendant les premiers mois de sa vie ne présente pas de risques de carence.

• A noter que des compléments tels que germe de blé ou levure alimentaire (à teneur garantie en B12) sont inutiles avant 12 mois. Toutefois, les questions de supplémentation lors du sevrage sont à discuter avec un pédiatre.

Alimentation végétarienne
- Le point de vue des diététiciens -
Si, en France, les alimentations végétariennes sont peu connues du milieu des
diététiciens, il n’en va pas de même aux Etats-Unis ou au Canada, où les organisations
professionnelles n’hésitent pas à prendre des positions très claires sur le végétarisme.

« Les régimes végétariens (y compris végétalien) menés de façon appropriée sont
bons pour la santé, adéquats au plan nutritionnel et sont bénéfiques pour la
prévention et le traitement de certaines maladies. […]
Les alimentions végétarienne et végétalienne bien planifiées sont appropriées à tous
les stades de la vie, y compris la grossesse et l’allaitement. Planifiées de façon
adéquate, elles satisfont les besoins nutritionnels des bébés, des enfants et des
adolescents, et contribuent à une croissance normale. […]
Du fait d’un intérêt croissant pour le végétarisme et grâce aux bénéfices
nutritionnels d’une telle alimentation, le développement de l’offre végétarienne
quotidienne devrait être encouragé. »

Cette position est celle de l’Association Américaine de Diététique et des Diététiciens du
Canada1, (AAD & DC) récemment émise en 2003. Ces deux organisations regroupent
70 000 diététiciens qui, par conséquent, ont endossé le fait qu’une alimentation
végétarienne bien conçue est bénéfique pour la santé.
L’Association Américaine de Diététique avait, d’elle-même, pris une position semblable
dès 1987 (déjà !) et l’avait confirmée en 1992, 1996 et 2000. Au fil du temps, la
documentation s’est étoffée, les considérations se sont faites plus précises, et les
domaines de santé envisagés se sont élargis.
Le paysage global qui se dessine maintenant est que le libre accès à une bonne
alimentation végétarienne est la condition expresse d’une prévention efficace de
nombreuses pathologies ainsi que d’une politique cohérente de santé publique.

La prévention et le traitement de
certaines maladies…
► Les affections pour lesquelles les diététiciens
nord-américains documentent un effet
bénéfique du végétarisme sont indiquées dans
l’encadré ci-contre 
► A quoi l’on peut rajouter une présomption
d’effet bénéfique pour le cancer du sein, la
fibromyalgie et la dermatite atopique.
Il n’est pas inintéressant de savoir que la
position publiée en 1997 ne faisait mention
que des maladies cardiovasculaires, de
l’hypertension, du cancer du côlon et des
maladies rénales. Il est important de se
rendre compte que la recherche continue de
progresser et d’associer le végétarisme à un
nombre croissant d’effets bénéfiques…
Quel végétarisme ?
L’AAD & DC insiste sur la variété, l’équilibre et le naturel (ce qui est d’ailleurs la
recommandation expresse de l’Association Végétarienne de France !) :
· Choisir une variété d’aliments
comprenant des céréales complètes, des
légumes, des légumineuses, des fruits à
coque (noix, noisettes, amandes,
cacahuètes, etc.), des graines et, si
souhaité, des produits laitiers et des
oeufs.
· Choisir le plus souvent des aliments
complets, non raffinés, et minimiser les
apports en aliments hautement sucrés,
gras et très raffinés.
· Choisir une grande variété de fruits
et légumes.
· Si des produits animaux comme les
produits laitiers et les oeufs sont
consommés, choisir des produits laitiers
allégés en matière grasse et consommer
oeufs et produits laitiers avec modération.
· Assurer une source régulière de
vitamine B12 et, si l’exposition au soleil
est limitée, une source de vitamine D.
► Il est remarquable de constater que les produits laitiers et les oeufs sont considérés
comme optionnels. Les diététiciens nord-américains expriment ainsi qu’ils n’ont aucun
préjugé à l’égard du végétalisme, qu’ils tiennent au contraire comme une option
végétarienne aussi bien équilibrable qu’une autre dans tous les cas de figure. Un des
rôles des professionnels de la diététique, explicitement mentionné dans le document,
est d’ailleurs :
« Donner des conseils ciblés pour organiser des repas végétariens ou végétaliens bien
équilibrés adaptés à toutes les périodes de la vie… [ou] destinés aux patients ayant des
besoins alimentaires particuliers du fait d’une allergie ou d’une maladie chronique ou
d’autres restrictions » !

Considérations nutritionnelles
Dans leur position officielle, les diététiciens nord-américains se sont particulièrement
intéressés aux apports en protéines, fer, zinc, calcium, vitamines D, B2, B12 et A,
oméga-3 et iode.
La consommation de sel iodé est recommandée, ainsi que l’assurance d’un bon apport
en vitamines D et B12 en utilisant si nécessaire des aliments enrichis ou des
suppléments. Un apport augmenté en acides gras alpha-linolénique (précurseur de la
chaîne des oméga-3) est préconisé pour les végétaliens.
Rien de ce qui est énoncé n’est en défaveur du végétarisme, qui apparaît au
contraire comme une alimentation facile à équilibrer, pour peu que l’on y réfléchisse.
Ainsi :
« Les protéines végétales peuvent à elles seules répondre aux besoins
nutritionnels si une alimentation végétale variée est consommée et que
les besoins en énergie sont satisfaits »
« Les études montrent typiquement que les apports en fer chez les
végétaliens sont supérieurs à ceux des végétariens et des non
végétariens, et la plupart des études montrent que les apports des
végétariens se situent au-dessus de ceux des non végétariens »
« Les sources de DHA venant des algues ont montré leur efficacité sur
les niveaux sanguins de DHA et d’EPA » [Note : colza et noix
constituent d’excellentes sources d’acide alpha-linolénique]
« L’apport journalier recommandé en iode chez les adultes est facile à
obtenir avec une demi-cuillère à café de sel iodé par jour » [Note : le
sel marin non raffiné est naturellement iodé]
Les périodes de la vie
Qu’il s’agisse des très jeunes enfants ou des adolescents, des adultes ou des
personnes âgées, des femmes enceintes ou allaitantes, des sédentaires ou des
sportifs, la position de l’AAD & DC est que : « l’alimentation végétarienne est
adaptée à toutes les périodes de la vie ».
· Pour les bébés, les diététiciens recommandent l’allaitement au sein ; ensuite, les
lignes de conduite pour l’introduction des aliments solides sont les mêmes chez les
végétariens et les non végétariens. Les courbes de croissance des enfants végétariens
et non végétariens sont identiques, du moment que l’alimentation apporte
suffisamment de calories et provient d’aliments variés. La pratique d’une alimentation
végétarienne équilibrée dès le jeune âge aide à mettre en place de bons
comportements alimentaires. Ainsi, les adolescents végétariens consomment-ils
davantage de fibres, de fer, d’acide folique, de vitamines A et C, de fruits et de
légumes que les non végétariens, mais moins de sucreries, de fast-food ou d’en-cas
salés que les non végétariens.

· L’alimentation végétarienne (y compris, donc, végétalienne) permet de couvrir les
besoins en nutriments et calories des femmes enceintes et allaitantes. En ces périodes
cruciales, la recommandation est simplement de fournir de bonnes sources de
vitamines B12, D et B9 (acide folique), ainsi que du fer et de l’acide alpha-linolénique
(oméga-3) en quantité suffisante, qui peuvent être apportées par des suppléments ou
des aliments enrichis venant complémenter une alimentation variée. Il faut également
veiller à modérer sa consommation d’oméga-6 (huiles de maïs, carthame, tournesol) et
d’acides gras « trans » (margarines à friture et graisses hydrogénées), qui peuvent
contrecarrer la production d’oméga-3 à longue chaîne (EPA et DHA) à partir de l’acide
alpha-linolénique.
· Les personnes âgées ont des besoins en calories diminués, mais augmentés en
d’autres nutriments comme le calcium, la vitamine D et la vitamine B12, qui nécessitent
une supplémentation dans la plupart des cas. Ceci n’est pas spécifique aux végétariens
et une alimentation végétarienne équilibrée est parfaitement adéquate.
· Enfin, l’alimentation végétarienne peut également répondre aux besoins des
sportifs de compétition. En particulier, les besoins en protéines peuvent être satisfaits
par des sources variées de protéines végétales, sans avoir recours à des aliments
spéciaux.
Conclusion

La position de l’AAD & DC sur les alimentations végétariennes présente de façon
objective les conséquences de ces modes d’alimentation sur la santé humaine en
les comparant avec celles d’une alimentation omnivore.
La conclusion est qu’un végétarisme basé sur une alimentation naturelle,
équilibrée et variée permet non seulement d’apporter à l’organisme ce
dont il a besoin, mais le lui apporte sous une forme bénéfique à sa santé.
La richesse et le sérieux de cette étude (256 références listées) en font un outil de
choix pour l’information du corps médical et pour toute personne concernée par le
sujet du végétarisme.
